  3. 115 g Beurre doux
  4. 120 g Oeufs
  5. 55 g Sucre roux
  6. 45 g Farine de blé
  7. 15 g Farine de châtaigne
  8. 1 pincée de Fleur de sel

  1. Préchauffer le four à 160°C et chemiser un moule à cake. (Le moule de la recette du Chef fait 18 cm de long, 7 cm de large et 7 cm de haut)
  2. Faire fondre les 2 chocolats (noir et au lait) avec le beurre au Bain-Marie ou au micro-onde à basse température
  3. Dans un autre bol, mélanger les oeufs avec le sucre. Il n’est pas nécessaire de fouetter pour les faire blanchir, il faut juste qu’ils soient mélangés
  4. Ajouter oeufs/sucre les farines tamisées et la fleur de sel au mélange précédent
  5. Incorporer le mélange chocolat fondu et beurre tiédit
  6. Mélanger jusqu’à ce que le mélange soit homogène, sans trop le remuer et sans incoporer d’air. Il faut juste que les ingrédients soient mélangés uniformément. L’appareil aura une texture un peu élastique, c’est normal
  7. Verser l’appareil dans le moule et enfourner pour 25 min
  8. Une fois cuit, le sortir délicatement du moule au plus vite pour éviter qu’il ne continue de cuire, et le laisser tiédir sur une grille
  9. Saupoudrer de sucre glace
